
These quick-to-make semi-sweet gluten-free applesauce cinnamon muffins are a great addition to your recipe collection. They are great as a snack or served with a hot cup of coffee for breakfast. They don't last 24 hours in my house. How long will they last at yours?!?!
Large bowl:
1 ½ cups unsweetened applesauce
¼ cup granulated sugar
¼ cup brown sugar
2 teaspoons cinnamon
½ teaspoon salt
Medium bowl:
½ cup vegetable oil
2 eggs
1 teaspoon vanilla
Small bowl:
1 ½ cups gluten-free flour
½ tablespoon baking soda
1. Preheat oven to 350°F
2. Spray regular size muffin pan with nonstick spray or line with muffin liners; set aside
3. Combine small bowl ingredient; set aside
4. Whip medium bowl ingredients; set aside
5. Mix large bowl ingredients; set aside
6. Combine in this order
-add small bowl ingredients into medium bowl ingredients; stir
-add medium bowl ingredients into large bowl ingredients; combine well
7. Fill muffin tin wells to the top
9. Bake for 20 minutes; test with toothpick=comes out clean=done
